Pecan Pie

Ingredients
  • pie shell
  • 6 Tbsp butter - room temperature
  • ⅔ cup dark brown sugar
  • 3 eggs
  • ⅓ cup light corn syrup
  • 1 Tbsp dark rum
  • 1 tsp vanilla
  • ½ tsp salt
  • 2¼ cups pecans, 1½ cups coarsely chopped, ¾ cup for the top
Instructions
  1. Blind bake the pie crust if it's not already done
  2. Preheat the oven to 375 degrees
  3. Cream the butter and sugar.
  4. Beat in the eggs one at a time.
  5. Add the corn syrup, rum, vanilla and salt. Beating until well combined.
  6. Stir in the chopped nuts
  7. Spoon the mixture into the pie shell. If you're being a bit lazy, just sprinkle the rest of the nuts on the top. If you want it to look perfect, arrange the pecan halves in concentric circles until the pie is covered.
  8. Bake on the center rack about 40 minutes, until filling is firm.
  9. Cool, and then serve with whipped cream
