Haddock with Bacon and Onions
Who knew there were so many recipes pairing fish and bacon. As you may have gathered, adding bacon to anything is always a hit in this house.
Yesterday when I got the message from the CSF that this week’s fish was haddock, they included a pointer to Rachel Ray’s recipe for Haddock with Bacon and Onions. Sounds like a winner for us, so today I gave it a try. Even though I probably could have found cippolini onions at Wilsons, I decided that slicing them up was a terrible thing to do (I always like them roasted whole), so I just used a purple onion instead.
I also completely forgot to put the chopped tomato on at the end, but to quote Tom, “I don’t see the tomato making it any better.” This one is definitely a keeper.
