Chicken Sausage, Orzo, and Roasted Broccoli Skillet
This is one of those times where I started with a recipe online, and then changed almost everything. So it’s time to write it up.
The inspriation was Broccolini, Chicken Sausage and Orzo Skillet. But I swapped garlic sausage for the italian, roasted the broccoli instead of using broccolini, and boosted the veg by adding some baby spinach. It’s not quite a 1-pot meal any more because you roast the broccoli, but it’s still very quick and easy.
- olive oil
- 1 large head broccoli (about 1 lb)
- 4 garlic chicken sausages
- 8oz orzo (about 1 cup)
- 1 large or 2 small cloves garlic, minced
- 2.5 cups chicken stock
- 0.5 cup grated parmesan
- baby spinach (optional)
- Start with the broccoli.Cut up the florets into fairly small pieces, saving the stems for the next step. Toss the florest with some oliveoil salt and pepper, then roast or air fry for about 20 minutes at 400 degrees.
- Cut the stems into thin sllices, then julienne, or shop into small dice to cook with the orzo.
- Cur the sausage in half lengthways, then cut into ¼ inch half moons.
- Heat a skillet with a couple of tablespoons of olive oil over medium heat, Add the sausage, and saute until some pieces are golden.
- Add the chopped broccoli stems, and cook with the sausage unril it turns bright green, and starts to get tender. About 5 minutes.
- Add the garlic, and saute until fragrant, about 30 seconds, then add the orzo.
- Stir everything until the orzo is lightly coated in oil.
- Add the stock, scrape up any browned bits on the bottom, and bring to a boil.
- Lower the hear to simmer and cover to cook the orzo. Check the box for the amount of time for your orzo. Mine was 7-9 minutes.
- When the orzo is cooked, add the parmesan cheese. At this point I added a couple of handfuls of baby spinach to add more veg to the dish. Stir until the chese is melted, and the spinach is wilted if you're using spinach.
- By thi time your broccoli florest should be nice and roasted. Add them to the skillet.
- Stir everything again, and serve with extra parmesan.
